Freeze Drying: The Simple Breakdown

Freeze drying (officially called lyophilisation) is a process that removes water from food while keeping its structure, flavour and nutrients intact.

Think of it as pressing pause on freshness.


The process has three main stages:


Step 1: Freeze It Solid

We start with fresh, ripe fruit — like pineapple, apple or banana.

The fruit is sliced and frozen at extremely low temperatures, turning all the water inside into ice.


Freezing locks in:

  • flavour

  • nutrients

  • colour

  • texture

This means what you get at the end still tastes like the real fruit — because it is real fruit.

 


Step 2: Remove the Water (Without Melting Anything!)

This is the clever part.


The frozen fruit is placed into a freeze dryer. Inside, the temperature stays freezing, but the pressure drops really low — creating a vacuum.


Under these conditions, something cool happens:

The ice doesn’t melt… it turns straight into vapour.

This is called sublimation.


As the ice vapour is pulled out of the chamber, the fruit begins to dry out — but because it never melts, the fruit keeps its original shape.
